This Port is produced in some vintages only, from a 2 hectare lot within the Noval vineyards where ungrafted pre-phyloxera vines survived.
The wine is made in the same way as all the other grapes from the Quinta do Noval vineyards. Grapes are trodden by foot to obtain the must, then during fermentation to obtain the best possible extraction in the lagares, the traditional stone vats from the Quinta.
Dark coloured with purple and cherry red colours.
Black cherry. Pepper. Hints of green.
Full-bodied, and powerful with lots of very fine tannins.
One for a lifetime.
Decant four, or five hours in advance.
Serving Suggestions: The wine benefits from being served slightly chilled, between 12º-16ºC.
Older Ports, such as Vintage Ports, often contain sediment and benefit from decanting, this procedure helps separate the wine from the sediment, allowing the flavours to shine.
Simply pour the wine slowly into a decanter, stopping when sediment appears at the neck of the bottle.
The bottle should be kept upright, protected from light, and at a cool and constant temperature.
Food Pairing: 1994 Noval Nacional Vintage Port pairs well with chocolate and caramel desserts, blue cheeses, and nuts.
