The grapes of the different varieties are harvested according to their ideal state of maturity. Stalked, and transported to the fermentation vats, this takes place at moderate temperatures for 20 days with a prolonged maceration that gives this wine an extreme aromatic complexity.
Its 12-month internship in new French wood gives it a remarkable complexity and elegance. The bottle matures for more than 8 months. Good ageing potential.
