Pernod is the oldest French aniseed liqueur (1805). It is a liqueur created in 1920 from distillates of star anise, fennel and 14 other aromatic plants such as coriander and mint. It contains very little liquorice, which distinguishes it from pastis.

Serving Suggestons: The classic way to enjoy Pernod is by diluting it with water, typically in a ratio of 5 parts water to 1 part Pernod. This creates a cloudy, milky appearance where the anise-flavoured oils emulsify and release their flavours. Adding a sugar cube over a slotted spoon while pouring the Pernod can also elevate the experience with a touch of sweetness.
